Instead, the Landmark Mandarin Oriental’s flagship restaurant sources its “black diamonds” from Tasmania, a place known to be home to the cleanest air in the world. Tasmania’s environment, as well as the fact that it is winter in the southern hemisphere at the moment, makes it the ideal place to nurture Culinary Director Richard Ekkebus’s favorite ingredient. The unique growing season enriches the truffle’s aroma and taste, making them fresher and more fragrant than their Italian or French counterparts.
The Platinum menu is priced at HK$2,488 per person, with an additional HK$1,388 per person for wine pairing.
